Wash with hot soapy water, rinse and dry immediately. DO NOT immerse in water or leave water sitting on the board. Rinse and dry board immediately. Sanitize with vinegar, hydrogen peroxide, or both. To disinfect and clean your wood cutting board, wipe it with full-strength white vinegar or 3% hydrogen peroxide after each use. Vinegar is especially good for people with chemical allergies. To eliminate odors from your wood board, rub the board with baking soda. Let stand a few minutes and wipe baking soda from board, and then rinse and dry thoroughly. Another very easy technique is to rub undiluted vinegar, fresh lemon juice or a cut lemon over the surface of the cutting board to neutralize odors. You will need to oil the board after any of these choices. You should oil your board at least once a month. An oil finish helps to prevent the wood from cracking or pulling apart at the seams. USP-grade mineral oil is the recommended and popular choice as it is the cheapest pure food-grade oil you can buy (do not use vegetable, olive or other oils as they can turn rancid). Simply wipe oil on with a soft cloth in the direction of the grain. Allow oil to soak in a few minutes, then remove the excess oil with a dry, clean cloth. When applied, mineral oil helps seal the pores of the wood decreasing the penetration of moisture.
